A butcher’s in Brittany has expanded its business by opening a restaurant inspired by New York delis.

A young couple have opened the Meat Couture in Brest. The husband is a butcher, recognized as one of the top trainees in Brittany, while his wife is a talented cook.

Meat Couture is a classic butcher’s from 8am to 7pm. Where it is unique is that there is a large wooden table which is laid out between 11am and 2pm which allows eight friends to taste the specials or to enjoy the day’s set menu. The meat is cut on demand according to the wishes of the customers.

This original combination shows off both the butchery and cutting talents of the couple as well as their know-how. All the meat is displayed in large refrigerated wardrobes with transparent doors.

The atmosphere of the venue is inspired by the world of delicatessens and caterers which became very popular in New York in the 20th century. In fact the red-brick décor and open kitchen in the room are intended to be distinctly reminiscent of New York.

The success of Meat Couture has been immediate. The suppliers of top Parisian restaurants now deliver their meat to this concept store in Brest, which chooses its products carefully based on quality and ethical criteria.
