In Honolulu, a restaurant that calls itself “the sommelier of sauces”
In Honolulu, the half-Italian, half-Japanese brand, Angelo Pietro, exports its secret sauces all over the world over.
The Angelo Pietro brand, created in 1980 by Kunihiko Murata, was at first an Italian restaurant chain with around sixty restaurants in Japan and Hawaii. Every pasta dish was made to order, taking about ten minutes. To ensure his customers didn’t get bored, Mr Murata started to serve salads and vegetable dips with multiple flavoured home-made sauces. Parents would see their children happily eating vegetables and would ask him for the recipe.
The restaurant then became an international brand, and began to bottle and export sauces which had made it famous. Today, sauce sales account for three-quarters of the company’s turnover, and 17 million bottles are sold every year. Product location is clearly very important.
Most of these USA-made sauces are created to complement salads, sandwiches and pasta, and contain no additives. They mix European and Japanese flavours: vinaigrette with sesame and miso, ginger marinade, soya sauce…the list goes on! These sauces won the gold medal at the 2012 Scovie Awards.
