In Toulouse, an organic, vegan and allergy-free fast food outlet
New diets are becoming increasingly popular. To adapt to this new trend, some restaurants are changing, like in Toulouse where an organic, vegan, allergy-free fast food outlet has opened.
How can you eat affordable, healthy food, especially when you have allergies? Mission impossible according to some… Marie Dubois, a young mother of two children with multiple allergies has lived through the experience.
Facing this personal difficulty while also noticing the trend of specific diets such as vegetarianism, veganism or even gluten-free, she decided to open her own restaurant.
That’s how the Lucas and Marie restaurant came about, an original concept based on cuisine adapted to certain diets and the 14 most common allergies (gluten, shellfish, eggs, fish, peanuts, soya, milk, nuts, celery, mustard, sesame seeds, molluscs), while also staying balanced and made as much as possible with local, seasonal, organic produce. The main objective remains, above all, being good value for money.
For the project to flourish, these young entrepreneurs launched a crowdfunding project on the Kiss Kiss Bank Bank platform. Thanks to the success of this appeal, the restaurant is due to open next September.
